Chocolate Cupcakes

I was going to a gathering of friends today and didn't want to arrive empty handed. What could a group of mums want but chocolate?! So I made chocolate cupcakes with chocolate icing.

200g Sugar
200g Butter
200g Self Raising Flour
5 Eggs
1 tsp baking powder
30g Cocoa
50g Chocolate Chips

Cream together the sugar and butter until light and fluffy. Mix in the flour, eggs, cocoa and chocolate chips, beat until well mixed. 

Spoon into the cupcake cases and place in the oven 180oC for around 15 minutes until spongy to touch. 

Melt 200g of milk chocolate and stir into the Italian merringue buttercream. Using a star nozzle pipe these onto the cup cakes and place a decorative butterfly on the side.

Overall I was pleased with these cupcakes, the butter cream was delicious and really complimented the cupcakes. I was pleased with these.
