Raspberry Cheesecake

After the enjoyment of the Bakewell cheesecake, my mum suggested we (she) make a cheesecake today to enjoy the creamy texture. We didn't want to make the Bakewell again as it take such a long time to cook and prepare and it would mean we couldn't enjoy it till tomorrow, so we instead searched for no bake recipes.

On our trusty BBC Food website we came across an easy recipe for strawberry cheesecake that we thought would fit the bill, however, we decided to alter it slightly and make a Raspberry Cheesecake.

It was very easy to make, mum started off my crushing the digestive biscuits, in a food processor, until they were crumbs and then added in melted margarine. This was then spooned into a loose bottomed tin and left to set in the fridge.

Meanwhile she mixed together cream cheese and icing sugar until smooth. Then added in vanilla extract and double cream. This was all mixed together until the mixture was light and smooth and well blended.

To make the cheesecake raspberry, mum bought some jam which we spread between the layers of the creamy mixture (when putting in the tin) and incorporated the flavour. This was then smoothed and left in the fridge to set slightly before we had our first taste.

Verdict: Mum says it was nice, the contrast of the jam with the cheesecake was nice but it wasn't as nice as the cherry Bakewell one. She gives it 8/10. I liked this cheesecake but found the mixture to be quite heavy and was glad the jam was in there to provide the contrast. 8/10 from me also so 16/20 in total. Not bad but not great.
