I've called these Rob's cakes because he was the one that decided on the flavours and got the tasters. For my sister's wedding they wanted a cupcake bouquet so I tried a few flavours out and Rob picked these ones.
So I made 3 different flavours of cupcakes these were mint chocolate, lime and white chocolate. To make the lime cupcakes I made a standard cupcake mixture and added lime zest to add a subtle hint. I cored these out and filled the centre with lime and lemon curd. Finally I made meringue and grilled them to slightly cook the meringue.
For the white chocolate cakes I made a vanilla cupcake and placed a square of white chocolate in the centre. I topped these with white chocolate butter icing, this was made with 250g butter, 500g icing sugar and 200g melted white chocolate.
For the mint chocolate cupcakes I used the rich chocolate cake mixture for the cupcakes. I cored them and filled with chocolate ganache. Finally I topped these with mint butter cream.
I topped each cupcake with a hydrangea flower, to tie in with the theme of the wedding, and some of these were then placed in a pot with others around the pot.
I was very upset that some of these got damaged on the journey over to the venue but it wasn't really surprising as they had to survive a 5 hour trip in a rather full car and getting lost!! The cupcakes tasted really nice and they disappeared off the table quite quickly. I had to replace the pile much more quickly than expected so hopefully that's a good sign.
Unfortunately I haven't yet managed to obtain any photos of the cupcakes. Hopefully I'll get some in due course.
